Cheetos Cookies


  • 150 ml fresh tomato juice (or passata)
  • a few drops of tabasco
  • 3 large garlic cloves
  • 3 ½ cup of plain flour
  • 125 g butter or margarine
  • 30 ml oil
  • 3 egg yolks
  • ½ cup of milk
  • 200 g cheese, shredded
  • 100 g spiced peanuts, chopped
  • 1 teaspoon of salt
  • 1 teaspoon of sugar
  • 1 tablespoon of butter
  • ½ teaspoon of baking powder
  • ½ teaspoon of baking soda

Cooking Instructions:

  1. Press the garlic and fry a bit with a tablespoon of butter. Add the tomato paste, salt, sugar and tabasco. Fry until it thickens and reduces to half the amount. Set aside to cool down.
  2. Place all remaining ingredients in a large bowl. Add cold tomato mixture and knead the dough. Put it in a fridge for about half an hour. In the meantime preheat the oven to 180°C.
  3. Form your cookies and place them on a paper-lined baking tray. Bake for 18 minutes, until the tops are nicely browned. Enjoy!
