- 3 large sweet potatoes
- 6 flour tortillas
- 100g fresh baby spinach
- 180g white cheese (it’s looks like feta cheese but it’s slightly different)
- 60g cheddar
- olive oil
- Boil some water and cook the potatoes according to instructions on the package. Once they are cooked, quickly heat up a tortilla sheet in the microwave (for 10-20 seconds), this will make them a bit softer and easier to fold. Start of with a bottom layer of baby spinach (uncooked), followed by chopped up pieces of sweet potato, slices of cheddar and feta. Finish of with just a few grinds of pepper and roll them up.
- Heat up some oil in a frying pan and fry the flautas until crispy.
