Country Omelette


  • 3 beaten eggs
  • 2 tbsp coconut oil
  • 1/4 cup sliced shallots
  • 6 torn curry leaves
  • 1 tsp chopped green chillies
  • salt
  • 1/2 tsp crushed black peppercorns

Cooking Instructions:

  1. Heat oil in a pan and saute shallots for a minute. Add green chillies and curry leaves and saute for a couple of minutes more.
  2. In a bowl, beat the eggs with salt and pepper. Add this to the shallots.
  3. Cook eggs till set and turn over to cook the other side.
  4. Fold in half and cut into thick triangles. Serve hot.
